- Veal is a by-product of the dairy industry. ... The other half of the calves born are male, and because they are of no use to the dairy farmer, they become veal. Male calves used to be slaughtered shortly after birth and sold inexpensively as 'bob' veal, but the veal industry has changed that by developing a new, more lucrative product, 'white' veal. 'White' veal was largely unknown in the United States, until about 30 years ago when it was introduced by Provimi, a European feed manufacturer seeking to expand its market in America. Today, the industry has grown into a multi-million dollar business, and one-third of the calves slaughtered annually are sold as 'white' veal. The raising of 'white' veal is a bizarre and irresponsible agricultural practice which has resulted in enormous animal suffering, human health risks, and environmental hazards.
- Although veal producers are supposed to withdraw antibiotics from the animals' feed a specified time before slaughter, compliance is scarcely regulated (less than 1% are tested), and withdrawal times are not respected. Sulfa drugs, chloramphenicol (which can cause fatal diseases in susceptible individuals), penicillin, tetracycaline, and other hazardous substances are commonly used in white veal production---despite the fact that the Food and Drug Administration has not approved these drugs, or any other for use in white veal. In addition, doctors and other health experts warn that the abuse of antibiotics such as penicillin and tetracyaline in veal production is resulting in the development of antibiotic resistant bacteria. ...

Environmental hazards associated with the veal industry have caused property values to drop nearly 40%. Concerned citizens have banned together to halt new veal barns from being built. The effluent from veal farms contacts pathogenic and bacterial contaminants which cause illness in humans and animals, and synthetic agricultural chemicals and pollutants which may bioaccumulate in the food chain and pose a toxic threat. ...
